Delicious, crisp, fiery pickled onions that are guaranteed to ignite a Ploughman’s Lunch or obliterate your unsuspecting buffet guests.
Each jar contains half-a-dozen naga jolokia (Ghost Pepper) chillies. The longer you leave them in there the hotter your onions will get.
Once the onions are gone you can use the chillies in your cooking and the scorching hot vinegar makes a great condiment for your chips.

Really nice pickles with a good heat. The tip about using the vinegar on chips is bang on as well. My old gran used to do it with ordinary pickled vinegar back in the 70s so it was a no-brainer to try it with the left over vinegar from the P.J. onions and it doesn’t disappoint. Slicing them thinly onto toast before grilling some nice cheese on top is proper comfort food, the heat of the onions doesn’t overpower the taste of the grilled cheese.

Make no mistake – these onions are H-O-T. A classic ghost pepper burn … on first bite they are sweet and much like any other crunchy onion, but then the heat comes at around the 20 second mark and will keep on burning for a good 10 minutes or more.
We had them on their own, and they were a delicious challenge in their own right. I can’t imagine that you’d be tasting much of the rest of your ploughman’s if you added them to it!
Top tip – on finishing the jar (there were about 8-10 onions in it) you’re left with a lot of vinegar and the original raw chillies at the bottom, so add more pickled onions from normal brands to spice them up too! We’ve got some little silverskins brewing at the moment, which will probably be lethal in a few weeks time.
