I did not craft this marinade myself — but I would happily take credit for discovering it.
Karimix Honey Chilli Marinade is a fine balance of sweetness and gentle heat. The honey takes the lead, the chilli behaves itself, and the blend of coriander, ginger, garlic and kaffir lime leaf gives it a rather charming Indonesian accent. It’s mild, yes — but do not mistake mild for dull.
This is the sort of bottle you reach for when the grill is lit and you wish to impress without intimidating. Brush it over chicken, prawns or vegetables and let it caramelise into something rather smug. It clings well, flavours deeply, and doesn’t bully the palate.
