This one starts off all sunshine and tropical charm before the Fatalii chillies arrive carrying a flaming chair and bad intentions.
The roasted pineapple gives it a deep caramelised sweetness rather than that sharp artificial fruitiness lesser sauces hide behind. Then the lime and ginger sweep through to brighten everything up before the heat properly takes hold. And it does take hold. Not instantly. Oh no. This one stalks you.
I have been recklessly pouring it over jerk chicken, grilled prawns and pork tacos. It also turns a dull cheese toastie into something worth writing home about. Splendid stuff for those who like their fruit sauces with genuine bite rather than nursery-level warmth.

Extremely disappointing. Nowhere near an 8 on the pain level. About as spicy as Cholula. The main flavour is bell pepper, not the advertised pineapple and fatalli.
