Fresh, smoky and dangerously drinkable in flavour, this tastes like something a particularly rebellious bartender would pour over tacos after closing time.
The jalapeños keep the heat gentle and grassy, while the lime delivers a sharp citrus freshness that makes the whole sauce feel incredibly lively. Then the mezcal creeps in with a soft smoky edge that lingers beautifully alongside the charred onion and garlic.
Absolutely glorious on fish tacos, grilled chicken, nachos and anything involving avocado. I also suspect this would rescue many disappointing burritos from mediocrity.
