Tabasco Brand, founded by Edmund McIlhenny in 1868, has remained a family-owned and -operated business on Avery Island, Louisiana. McIlhenny created Tabasco Red Pepper Sauce to spice up the bland diet of the Reconstruction South. He grew Capsicum frutescens peppers from seeds he received from Mexico or Central America and developed his sauce in 1869. The red stick, or ‘le petit bâton rouge,’ used to measure pepper ripeness, is still a symbol of quality today.
Tabasco Sauce quickly gained popularity, with its name derived from Mexican Indian words meaning “place where the soil is humid.” Although McIlhenny’s wax seals are no longer used, the sauce stays true to his original recipe. Now aged up to three years in white oak barrels and made with high-quality distilled vinegar, Tabasco Sauce delivers a bold, time-tested flavour that has been a favourite for over a century.
